I am a mega fan of vinegar salads. Cucumber tomato onion salad is made with zesty vinegar and oil and totally hits the hunger spot! I love how fresh this salad tastes. Boy oh boy, my mouth is watering just describing this yummy salad to you! I can remember my mother making cucumber tomato onion salad all summer long when I was a kid. My sisters and brother and I actually LOVED the stuff. We didn’t care that it was vegetables. We even loved the onions.

My church is hosting a community picnic next month and I cannot wait to show up with this yummy cucumber tomato onion salad!

When it comes to savory salads with lots of crunch and crisp this cucumber tomato onion salad is the ticket. Not only is this salad delicious but it is super easy to make and quite economical! If you use a sweet onion even the kiddos will like it. I prefer using sweet Vidalia onions over yellow or white as they give the salad and really nice flavor. If I am going to a picnic this cucumber tomato onion salad is the type of food I hope to see on the table.

The recipe below calls for white vinegar but you can use apple cider if that is what you prefer.

Ingredients

2 Cucumbers sliced

2 Onions quarter

2 or 3 quarted Tomato’s

Salt , pepper

2 Tablespoon Bertolli olive oil

2- 1-1/2 cups ice water

A little over 1 cup of Heinz white vinegar

1 -1/2 cup Domino white sugar

Instructions

Let marinate several hours for best results.

This cucumber tomato onion salad is excellent the next day! I like to whip a batch of this yummy salad up and let it marinate overnight in the refrigerator, I know it is hard to wait but trust me, it’ll be worth it!
