Roasted Spaghetti Sauce

I make a double batch and use it for spaghetti, lasagna, stuffed shells, and I think it could also be a good pizza sauce. It’s probably my favorite. I found it in my Vitamix cookbook.

Ingredients

2 lbs Roma tomatoes
3 garlic cloves, peeled
½ large carrot halved
1 ½ cups button mushrooms
½ red onion, sliced thick
3 T EVOO
1 tsp salt
¼ tsp pepper
6 oz can tomato paste
¼ cup fresh basil leaves
¼ cup fresh oregano leaves

how to make Roasted Spaghetti Sauce

1.  preheat oven to 450 degrees.  Place tomatoes, garlic, carrot, mushrooms, and onion on a cookie sheet.  Drizzle with olive oil and sprinkle with salt and pepper.  Roast 20 minutes, stirring once in-between.

2.  Place all vegetables, liquid from pan and tomato paste in blender.
3.  Blend one minute at speed 5.  Add basil and oregano and blend for a few seconds to distribute/chop.
